According to legend the first bagels came into the world when a Viennese baker wanted to pay tribute to the King of Poland in 1683. King Jan had just saved the people of Austria from Turkish invaders. Since the king was a great horseman, the baker decided to shape a yeast dough into an uneven circle resembling a stirrup ('beugal'). (Other German variations of the word are 'beigel', meaning 'ring', and 'bugel', meaning bracelet.)

During the 1880's thousands of Eastern European Jews immigrated to the United States and brought with them the desire for bagels. In 1907 a union for bagel bakers formed, the International Bakers Union. Only union members could learn the secrets of bagel making. During the 1960's machines were developed that could produce 300-400 bagels per hour.

During the mid 1980 bagels started being sold across the country, and even in grocery stores, and as fast food.
